“Fukushima Map” No. 10 – Fermented Foods –

The 10th installment of the project ``Fukushima Mono Map'' being held at `` BEAMS JAPAN'' is titled ``Fukushima Fermented Foods,'' and is a collaboration with Niida Honke, a sake brewery founded in 1711.It is used in the preparation of new natural sweets and sake. We will sell bags made from recycled bags.

Niida Honke, which has been in operation for over 300 years in Koriyama City, Fukushima Prefecture, produces sake using natural rice and natural sake mash without using any pesticides or chemical fertilizers. This time, we have developed a new product focusing on sweets made from natural rice, which Niida Honke is focusing on along with sake brewing, and sake bags used in the sake brewing process.
We have items that you don't usually see, such as natural sweets that don't use sugar or fat, and bags that were reborn from sake bags based on the ideas of buyers from BEAMS JAPAN.

Kouji chocolate

A product made by removing the moisture from Koji Amasake and crystallizing its ingredients. No cacao, sugar, fats or oils. In addition to the newly developed Yuzu Ginger, we also sell existing products Plain, Sansho, Black Sesame Kinako, and Raspberry.

sake bag bag

A bag made from a reused sake bag that was actually used at Niida Honke and then stocked. The sake bag was cut into two halves, the top part being made into a sacoche, and the bottom part made into a tote bag.

In consideration of the global environment, we eliminate outer boxes and packaging and use reusable bottles that can be reused. The series has been redesigned on the occasion of its 50th anniversary.
