The delicate white flesh of "halfbeak" and "red sea bream" is smoked with the fruity aroma of "apple," a fruit found only in fruit trees.
Spanish mackerel, which heralds the arrival of spring in the Seto Inland Sea, is served in Saikyo-yaki.
・Grilled red sea bream: During the feudal era, the Imabari domain had a "sea bream magistrate" who is said to have presented dried sea bream and other fish to the shogunate. Sea bream, which is full of flavor, has long been used as a celebratory fish due to its vibrant color and beautiful appearance.
・ Dried whole halfbeak: The flesh of the halfbeak is clear and beautiful, but for some reason, only the inside of the belly is black, so it is also used as an analogy for a scheming person. In this region, it is caught in a special net called a "sayori net." It is a high-quality fish with a mild and elegant taste.
・Spanish Spanish mackerel Saikyoyaki: The name "sawara" (meaning "spring"), written with the fish radical and pronounced "sawara," captures the season, but because of its slender body, it is also written as "narrow-bellied," and the smaller ones are written as "narrow-waisted," pronounced "sagoshi." In the Setouchi region, it is prized as a celebratory fish that heralds the arrival of spring.
・Smoked apple chips: These have a sweet, fruity aroma that is unique to fruit trees. They have a mild flavor without being too strong in aroma or color. They go well with light-tasting ingredients.
