Rice seasoning made with the bounty of Setouchi
Sea bream rice
In the Toyo region, fishermen cook a whole red sea bream into rice on their boats. This set contains wild red sea bream from the Seto Inland Sea, Iyo's specialty Matsuyamaage, dashi kelp, and dried carrots for color. This set of red sea bream rice can be easily made at home without the hassle of bones, and can be cooked in a rice cooker.
We process fresh wild red sea bream caught in the Seto Inland Sea, grill the meat until fragrant, and use the bones to make a red sea bream soup stock. Add the usual amount of water to two cups of rice and add all the ingredients in the seasoned rice base. Then, just press the switch on the rice cooker. Once cooked, add chopped shiso leaves, mitsuba, kinome leaf buds, chopped nori seaweed, etc. to taste and enjoy rice full of the delicious flavor of red sea bream.
Beef and burdock rice
"Beef and Burdock Rice" is a luxurious dish made by tenderly simmering beef shank from Setouchi (Kagawa or Ehime prefectures) in soy sauce and mirin, and combining it with the perfectly matched burdock root for a tender, crumbly texture.
Wash two cups of rice, place in the inner pot of the rice cooker, and add water until it is the amount you would normally add when cooking rice. Add the sauce and all the ingredients (beef burdock, Matsuyama age, carrots, and kelp) that came with the rice cooker. Add the ingredients together with the stock. Cook in the rice cooker, remove the kelp, and mix the rice lightly to finish.
